Roti



3 cups Atta flour
1 Tbsp. olive oil
1 tsp. salt
1 Tbsp. sugar
1 cup warm water or as needed
1/2 cup warm oat milk

Mix together flour, olive oil, salt, and sugar. Make a well in the center and add warm water and milk. Mix until a soft dough forms. Cover with plastic wrap and let rest for one hour.

Divide into three-inch balls (approx. 12 balls total). Roll each into 6 to 7 inch circles. Cover with plastic wrap.

Heat a cast iron skillet on medium-high heat. Place one roti on the skillet and cook for 30 seconds. Turn over and cook for another 30 seconds or until small air pockets form. Turn it over once more and cook for a few more seconds unil browned. Keep finished roti warm in a towel as you finish cooking the remainder.
