Moong Daal Khichadi - Instant Pot
1/2 cup moong dal
1/2 cup basmati rice
2 Tbsp. avocado oil
1 small to medium sized onion, finely chopped
1 medium sized tomato, chopped
1/2 inch ginger, finely chopped or grated
1 tsp. cumin seeds
1/4 tsp. turmeric powder
1 pinch asafoetida
1/2 tsp. red chili powder
2 cups water
1 1/2 tsp. salt
Rinse and wash moong dal and rice together. Soak both of them for 30 minutes in water.
Heat avocado oil in instant pot and add cumin seeds. When they start to sputter, add onions. Saute' onions until translucent. Then add tomato and ginger. After tomato has broken down, add turmeric powder, asafoetida, and red chili powder.
Drain the rice and moong dal and add them to the instant pot. Pour in water, and season with salt. Stir. Close lid and pressure cook for 8 minutes.(Cooking times may very between instant pot cookers.)
